How do you handle characters who change personality without your say so? Or, how do you handle characters whose spontaneous actions change the plot or course of the story?

Characters know their stories better than I do. My job is to choose the most relevant parts of the information they give me and craft them into an entertaining and believable narrative. So, when a character tells me I’m doing something wrong, I listen and change my approach.
