The Laredo series began with an old ballad, “Streets of Laredo” and the sad image of a wounded, unidentified Confederate soldier. When I first wrote Boone Wilson’s novel, “The Legacy of Boone Wilson”, I intended it to be a standalone novel but Boone and his brothers, including Ezekiel, didn’t listen. “The Birthright of Ezekiel Wilson” is the third in my Laredo stories and more are in the works.

Ingredients
  

  • 6 Pieces Bacon
  • Various meats (beef, pork chicken, turkey, wild game, anything)
  • Several large yellow onions peeled and diced
  • Salt and pepper to taste
  • Dash Sage
  • 2 Pounds Potatoes peeled and quartered
  • Garlic cloves to taste peeled and diced
  • Vegetables cook’s choice can include any or all: carrots, corn, peas, any type beans,green pepper, okra, tomatoes, leeks, green beans.
  • Chicken stock or broth

Instructions
 

  • Fry bacon in a heavy dutch oven. Remove crisp slices, brown onions and garlic.
  • Brown the meat if desired, add stock and other vegetables.
  • Simmer uncovered for several hours.
  • Burgoo is best after a long simmer and served with homemade biscuits, cornbread, or any light bread.
