Top 5 Breakfast Ideas By Alexa Piper

When one has a whole day of writing ahead, breakfast is advised. I, like many writers, have a day job, so I don’t always get to start my day with a nice cup of coffee and some words, but on the weekends, that changes. I’d like to share my favorite breakfast ideas with you, because I think they’re great for readers as well.

 

  1. Pancakes

Duh. My favorite ones are simple:

  • about a cup of flour, I prefer oat, but use whatever
  • mashed banana for sweetness, one or two of those; you can swap with agave or another liquid sweetener
  • about a cup of plant milk or water, possibly more or less, depending on what flour you used
  • Throw all of this together, adjust the amount of liquid until you get the desired thickness, cook, and top with whatever you like.
  1. Savory chickpea pancakes

I love these, and they are so easy to make. Use half a cup to a cup of chickpea flour, add salt and pepper and a quarter cup to half a cup of water. Let sit for ten minutes or so. I use that time to grate a zucchini, which I mix into the batter before cooking it. You want a thicker batter for this, and depending on your zucchini, you may need to add a little more water before you cook it. Is great on bread or on its own.

  1. Rolled oats with banana, blueberries, and natural peanut butter

One of my personal favorites and what it says. I usually have this with either oat milk or almond milk.

  1. Avocado toast with cherry tomatoes

What can I say, this one never gets old, and it’s delicious. Yum.

  1. Coffee

Because I don’t actually always eat breakfast, but I never start my day without coffee.

I think apart from the chickpea pancakes, I’ve even mentioned all of these breakfasts in my writing. Especially the coffee of course. There is coffee in a good chunk of the fiction I write, and I wouldn’t have it any other way.
